Fish taco bowl with mango salsa

Ingredients:

  1. two limes
  2. one pound of cherry tomatoes
  3. one can of black beans
  4. three tillipia fillets
  5. one white onion
  6. one avocado
  7. one green pepper
  8. three bowls of rice
  9. 4 cloves of garlic
  10. one hot pepper
  11. one mango
  12. cilantro
  13. one green onion

Mango and Tomatoes together in a bowl with cilantro, mix and salt to taste.

One can never have too much garlic.

Slice avocado into bite size small cubes

In another pan, pan fry the garlic, yellow and red pepper, onion with olive oil and add the beans and rice

Throw the fillets onto the pan and sear each side for 4 minutes.  Add additional fajita mix while searing the fish.  Marinate the fillets with fajita mix, pepper and salt for 30 minutes prior to throwing onto the pan.

Mix the contents of the three bowls together mashing the fix into the rice and mango salsa

The ingredients combine to feed 4 people with relative ease, at a cost of less than $200HKD.  It works out to $50HKD per person and its healthy.  Fish in place of meat, beans, fruits and vegetables all in together in a bowl.  It’s easy and quick to make.  Paleo friendly.
