Tomato, Avocado and Mozzarella Pasta Salad

Tomatoes and avocados in vinegar and olive oil makes for an interesting combination.  Tomatoes, mozzarella and basil with a drenching of vinegar and olive oil is delicious.  Knowing full well tomatoes go great with most vegetables and wanting to maximize the amount of nutrition in my meals, I decided to mix it all together in a pasta salad.


  • a box of heirloom/cherry tomatoes (stick to small tomatoes as they hold their shape better after you half them)
  • one avocado
  • one block 125g mozzarella
  • half a bag of 400g pasta


  • half the tomatoes
  • square the avocados and mozzarella
  • mix with pasta
  • drizzle olive oil and vinegar
  • garnish with a healthy dose of parmesan cheese.
