Dinner – Angel Hair Pasta in a garlic olive oil sauce

April 2.  First dinner of the week.  I generally skip dinners as once you are out of your 20s, dietary concerns change.  The body is not growing anymore so the need for 3 meals drop drastically as the metabolism slows.  I suspect this is one of the reasons why people put on weight so quickly once they get into their 30s.

My workout for today: 20 mins on the elliptical, 3 sets of the following circuit: 20 body weight squats, 20 single leg squats, 30 push-ups, 10 jump and sprawls and 10 bird dogs, finish off with more leg drills: dog drills, fire hydrant and leg mobility.

Now to the main event – Dinner.

Angel hair pasta in a olive oil garlic sauce with cherry tomatoes, basil and Parmesan cheese.  The photo may not look appetizing but the pasta was a jumbled mess that covered all attempts to photograph it properlyImage

Here are the raw ingredients.  Also made a green salad with balsamic truffle vinaigrette dressing with one avocado.




Only cook the angel hair pasta according to the instructions on the package.  All my prior attempts at cooking pasta require a cooking time of about 10 in boiling water.  As the angel hair is considerably thinner, the cooking time in boiling water is significantly less – 2 mins vs 10 mins.  I overcooked it so some parts were clumped together while other parts broke apart on first touch.  Olive oil and garlic makes a very light dressing that is refreshing and clean.  The next iteration of the sauce will include a touch of lemon juice and white wine.  Cilantro may make a nice garnish, remember not to chop it up but leave it whole so the flavour is intact.  Forgot to add a pinch of salt and pepper.  Jalapeno peppers would give it a nice kick.  Avocados in everything.
