Why does HK lack good Pho?

Good Vietnamese food is impossible to find.

I just want simple beef noodles in the slow cooked pork bone broth with sprouts, cilantro and hot peppers.  Is it too much to ask?  The HK selection for vietnamese food is both expensive and terrible.  I have tried most places on the HK island side and they have all been underwhelming.  This is the one thing I look forward to while back in the West Coast.  Pho and Namwich.

Also miss the stupid mystery meat costco hot dogs with a large pepsi for $1.50.  Costco would be a god send in HK.  They could crush the market and provide consumers a welcome change from the current monopoly.  I have seen HK stores selling Kirkland brand products so the demand is there.  Image
